Here’s what’s baking at my house: Walnut and Banana Cookies
Prep Time: 20 minutes
Cooking Time: 10 to 15 minutes
Makes: 25 cookies
Ingredients:
- 1 1/2 sticks butter, softened
- 3/4 cup packed light brown sugar
- 2 large ripe bananas,mashed
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 cup chopped walnuts
Directions:
- Put the butter and sugars in a bowl and beat until light and fluffy. Mix in the bananas. Sift in the flour, salt, and baking powder and mix well. Stir in the walnuts. Chill for about 2 hours.
- Preheat oven to 350˚F. Grease two baking sheets or line with nonstick baking parchment.
- Drop heaping teaspoons of the mixture onto the baking sheets and flatten with the back of a spoon. Bake for 10 to 15 minutes until golden. Cool for 5 minutes on the baking sheet then transfer to wire racks. Store in an airtight container for up to a week.
