Here’s what’s cooking at my house: Buttermilk Pancakes
This is my version of the Funny Face Pancake, a lot like the one you get at Ihop.
Ingredients:
- 3 cups all-purpose flour
- 4 tablespoon white sugar
- 3 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon kosher salt
- 3 cups buttermilk
- 1/2 cup almond milk
- 2 eggs
- 1/3 cup butter, melted
Directions:
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat together buttermilk, almond milk, eggs, and melted butter until smooth.
- Pour the wet mixture in with the dry mixture and blending the two together until there is no lumps in the bowl.
- Heat a lightly oiled griddle or frying pan over medium-low heat.
- Scoop the batter onto the griddle, using 1/2 cup for each pancake. Brown on both sides and serve hot with or without maple syrup.
